Ingredients
500g pork mince
500g beef mince
3 eggs
2tbsp breadcrumbs (fresh is nicer but can use panko crumbs instead)
4tbsp parsley
4 cloves garlic
1 onion
2 lemon's worth of zest
Some flour for dusting
Splash of olive oil for frying
Method
Prep: 15 mins
Cook time: 25 mins
1. Roughly chop onion and put in bowl of food processor along with garlic and parsley. Blitz until very fine
2. Add egg and blitz again
3. Place mince in a large bowl and add the onion mix along with lemon zest and breadcrumbs
4. Mix well, season with salt and pepper and mix again
5. Take dessert spoon full of the mix and roll into balls
6. Place flour in large tray and season well
7. Roll each meatball in the flour
8. Warm the olive oil in a pan and add the meatballs, cook until browned on all sides
9. Have a pot of tomato sauce simmering and add the meatballs
10. Simmer for 25 mins
11. Serve with pasta and a crunchy salad
