This is a quick and easy chocolate cake that only has six ingredients. I’ve been making it for over 25 years and it never fails to get a yummy response! Delicious served with yogurt or cream and berries
Ingredients
225g Butter - unsalted
250g Dark Chocolate (I use 72%)
5 Eggs
100g Caster Sugar + 1 dessert spoon extra
15g Cocoa powder
1 tsp Vanilla Extract
Method
1. Melt butter and chocolate together.
Options
In heatproof bowl over simmering water
In microwave for 25 sec burst stirring in between
In saucepan on induction hob
2. Whisk eggs, vanilla and 100g caster sugar together until very thick and foamy
3. Mix extra sugar and cocoa together and add to egg mix
4. With mixer running slowly add melted butter and chocolate. Mix until combined
5. Pour into tin (round, rectangular, loose bottom) lined with baking paper
6. Place tin an a large tray with water - coming up about 1/4 way
7. Bake in preheated oven at 160oC for 20 mins or until top springs back when lightly pressed
8. Remove tin from water bath and place on cooling rack. Leave cake in tin and allow to cool before removing
